Tasting notes

Deep ruby red, tends to garnet red as it ages. The aroma is characteristic exhibiting hints of black cherry, raspberry and blueberry; with age it acquires some spice. The palate is intense, savoury and firm.

Vinification

Soft pneumatic pressing, followed by long maceration and fermentation in stainless steel tanks at about 27° C. The wine ages in stainless steel tanks for approximately 6 - 7 months. It is bottled after about 8 months from the harvest.

Food pairing

Complements red meat dishes, in particular roasts, poultry, rabbit, and semi-mature cheeses.
